Herbed Lentils and Rice
 
Ingredients:Serves 4 to 5

Melted Swiss cheese makes the difference in this very easy and attractive pilaf.


2 2/3 cups chicken broth
2/3 cup dry USA lentils, rinsed
3/4 cup chopped onion
2 small cloves garlic, minced
2/3 cup brown rice
1/4 cup dry white wine
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
1 cup grated Swiss cheese
 
Instructions:1. Preheat oven to 350°F.
2. Combine all ingredients except cheese in an un-greased 1 ½ quart casserole dish. Stir in half the cheese.
3. Bake covered, 1 ½ to 2 hours, or until lentils and rice are tender and liquid is absorbed.
4. Sprinkle remaining cheese on top of casserole. Bake uncovered, 3 to 5 minutes or until cheese melts.
