Lentil and Rice Pilaf

|Ingredients:||Serves 4 to 6|
3 tablespoons butter
1 cup long-grain rice
1 cup dry USA lentils, rinsed
4 cups water
1 large onion, sliced
2 1/2 tablespoons olive oil
Juice of 1 lemon, or to taste
Salt and freshly ground black pepper, to taste
|Instructions:||1. Melt butter in a 3 quart saucepan. Add rice and lentils and cook for 1 minute, stirring. Pour in water and bring to a boil. Reduce heat, cover, and simmer 25 to 30 minutes or until rice and lentils are tender.|
2. Ina skillet, cook onion in olive oil until soft and translucent.
3. Gently mix onions and lemon juice into the rice and lentils. Season to taste with salt and pepper.
4. Let stand for 1/2 hour, then serve.
